Second Summit Tacos Restaurant Planned for Boulder

Summit Tacos is bringing a second location to Boulder, with an opening planned for August.

The new restaurant will be at 1149 13th Street according to a city filing. Summit Tacos also confirmed on its website that the Boulder location is expected to open in August. The restaurant’s original location is at 237 Collyer Street in Longmont, where it serves a casual menu inspired by Mexico City street food.

Summit Tacos was founded by Edwardo Perea and Alejandro Rodriguez, who launched the concept as a food truck in Longmont in 2017 before opening their first brick-and-mortar restaurant in 2019. The restaurant is known for its Mexico City-style street tacos and authentic Mexican cuisine.

Customers can expect a menu featuring street tacos, enchiladas, burritos, quesadillas and breakfast burritos, along with appetizers such as esquites, queso and guacamole. The restaurant also serves traditional Mexican desserts, including chocoflan and carlota, as well as margaritas, palomas and Mexican beers.
