Denver’s Lower Highland neighborhood is set to welcome The Acadian, a Cajun restaurant from chef David Simpson, at the Tamburello building on Boulder Street.
The restaurant will occupy 4,900 square feet at 1575 Boulder Street, where plans include a second-story bar, rooftop dining and an outdoor patio. Its menu is expected to feature Louisiana-inspired dishes such as jambalaya, truffle tenderloin steak and braised short ribs.
Simpson, a Denver native and Tulane University graduate, brings experience from Bogotá, Colombia, where he co-founded Tremé, a Cajun and Creole restaurant known for combining traditional Southern flavors with local Colombian ingredients.
The new restaurant is moving into the former Dimestore Delibar space, which closed in October 2025. Renovations will transform the space to accommodate the restaurant, bar and outdoor dining areas.
The Acadian will share the building with The General Store, a boutique shop expanding from Littleton. The two businesses are among the latest additions to a property that has become a familiar dining and retail destination in LoHi.
An opening date for The Acadian has not been confirmed.
