A new seafood and oyster bar is coming to the Denver Tech Center, with Shucking Good Hospitality planning to open The Coastal Service at On The Square.
The restaurant will be located at Belleview Avenue and Ulster Street and is expected to open in early 2027.
The Coastal Service is a new concept from Shucking Good Hospitality, the restaurant group behind Blue Island Oyster Bar & Seafood and Oliver’s Italian in nearby Greenwood Village. While The Coastal Service shares Blue Island’s East Coast roots, the new restaurant draws more directly from founder and president Sean Huggard’s years working as a chef on Nantucket.
The menu will center around a raw bar, fresh seafood and seasonal coastal dishes, along with premium steaks. Guests can also expect an extensive selection of wine, martinis and cocktails.
Huggard said the idea came from noticing a gap in the Denver Tech Center. “This is the restaurant I’ve always hoped I’d get to build. DTC didn’t have an oyster bar, and this gave me the chance to create one shaped by my years as a chef on Nantucket rather than by the farm in New York.”
He added that guests can expect the same level of quality in their oysters that they’re bringing in from the farm and farmer partners across the world. “What they can expect at the Coastal Service is something that’s maybe just slightly more polished, slightly more elevated, especially for the discerning diner that is in the tech center,” Huggard said.
The name The Coastal Service is a nod to the Postal Service, with the concept playing on the idea of delivering fresh seafood and oysters with the same reliability. The restaurant is being designed for everything from business lunches and happy hours to weeknight dinners, with a lively dining room and a menu focused on fresh seafood.
“The the tech center of Denver is a business hub, so we’re really going to be focused on a strong business lunch as well as a strong business happy hour, and then converting into business dinners in the evenings as well. One of the greatest things about the tech center is it’s also a great residential neighborhood.”
“That’s unique, I don’t think just to Denver, but I think that’s unique in a lot of parts of the world where you don’t get that daytime density of of class a office space alongside beautiful beautiful residential neighborhoods, great churches, great synagogues, beautiful homes, just nice neighborhoods. So, there will be lots of different varieties of fish simply prepared from the broiler and just really clean seafood, a great caviar program, and then a really strong martini list,” he said.
The Coastal Service is expected to open at On The Square in early 2027. Further details about the menu and design will be announced closer to the opening.
