“Started as an idea… and now it’s getting REAL,” says a Facebook post published by Gringos Tacos, an upcoming food truck serving Flagler County. “Late nights, big dreams, and a food truck finally coming to life. We’re not just talking about it anymore—we’re building it.”

Another Facebook post, by C2C Custom Vinyl and Graphics, showing the visuals developed for the brand, revealed some news about Gringos Tacos’ menu:

“BIRRIA BIRRIA BIRRIA!! Heads up Flagler county! Chef Chris and the Gringos Tacos FL food truck is about to infiltrate Flagler—Make sure you go try his awesome Birrita Tacos and RAMEN!!!”

Signs point to Gringos Tacos launching soon, as What Now recently came across plan review paperwork for the food truck submitted by Dos Bros Foods LLC.

What Now reached out on Thursday to Chef Chris Gibbs to ask about plans for the Gringos Tacos rollout. Gibbs was not immediately available for comment.
