Holsteins Shakes & Buns Heads Downtown

After departing the Strip, Holsteins is making a comeback in early spring 2025

A “crave-worthy burger destination known for its indulgent creations and legendary over-the-top milkshakes,” Holsteins Shakes & Buns finished a 15-year run on the Las Vegas Strip this year. Now, after a hiatus, it’s preparing to make a comeback this spring, with a new location Downtown in the Arts District.

Gen3 Hospitality closed the longstanding location at the Cosmopolitan in order to replace it with upcoming Mexican restaurant Amaya Modern Mexican—which is expected to launch in January. That makes 2025 a bus year for Gen3, as Holsteins will reopen in its new home, at 1216 S Main Street next to Velveteen Rabbit, in early spring.

The brand’s over-the-top burgers have included the Billionaire Burger (Foie gras & prime beef blend, provolone cheese, onion marmalade, port reduction, frisée, arugula & truffle aioli) and the Short Rib Burger (braised short rib, provolone cheese & onion ring).

Gen3 president Stacia Stephens told What Now that guests will be able to expect the return of a lot of old favorites at Holsteins Downtown, but there will also be some fun new additions to the menu. For now, though, much is still under wraps.

“Holsteins’ menu will spotlight its famous gourmet burgers, inventive salads and decadent milkshakes,” says a press release. “Highlights include a dry-aged beef burger with smoked bacon, aged goat cheddar and truffle mayo; a lighter but equally indulgent option featuring fresh, crispy fish; and a bold plant-based burger topped with house-made pickles and avocado.

“Bam-Boozled Shakes, Holsteins boozy takes on milkshakes, will also make the move downtown with options like the Campfire S’mores, a blend of rich chocolate, toasted marshmallow and a shot of whiskey. The bar program will feature a rotating selection of local craft beers on tap and a menu of simple yet inventive cocktails crafted to fit Downtown’s laid-back vibe.”
