What Now reported last summer on plans for Mexican restaurant chain Costa Vida Fresh Mexican Grill’s Las Vegas debut. That opening is finally at hand: Google Maps shows an opening in store at 808 E Flamingo Road on March 13.
Meanwhile, however, the Utah-based brand appears not to be skipping a beat in the Las Vegas Valley. Building permit paperwork submitted to Clark County shows plans for another Costa Vida opening at 2320 E Serene Ave. The plans detail a “remodel of existing building that was previously a restaurant.”
The Costa Vida menu takes a build-your-own approach to favorites like burritos, enchiladas, quesadillas, tacos, nachos, salads, and Baja Bowls. They’re served up with a choice of protein: pick from Sweet Pork, Shredded Barbacoa Beef, Grilled Steak, Grilled Chicken, and Raspberry Chipotle Chicken.
“We source the highest-quality ingredients and make our recipes from scratch every day,” says the Costa Vida website. “Our thoughtfully crafted menu items make you feel nourished and good, not ready for a siesta.”
What Now reached out to Costa Vida CEO Dave Rutter on Wednesday to inquire about plans for a second Las Vegas opening after the brand’s imminent debut. Rutter was not immediately available for comment.
