Paperwork shows Alebrijes by Chef Paco opening at Neonopolis

A chef who has been at work in Las Vegas for some years now is opening a new restaurant Downtown. Its future home appears to be at Neonopolis.

This week, What Now came across business licensing paperwork and liquor licensing paperwork for a new restaurant called Alebrijes by Chef Paco, which would open at 450 Fremont Street (Neonopolis’s address), in suite 310.

You may already be familiar with Chef Paco. Chef Paco Cortes made headlines in the Las Vegas Review-Journal back in 2017 for “Bring[ing] the Flavors of Native Mexico city to El Dorado Cantina.” That restaurant now has three locations in the valley.

What Now reached out to Chef Paco on Thursday to ask about plans for Alebrijes by Chef Paco. The chef confirmed news of the project (although he did not confirm the location). Cortes declined to comment further at this time. What Now is awaiting an update from the restaurant staff.

The restaurant’s name is an artful one—literally—referring to bright-colored Mexican folk art sculptures of fantastical creatures. It seems safe to say the new restaurant will feature Mexican cuisine, but how might the image of Alebrijes be reflected in the menu? We’ll have to wait and see.
