It looks like a new ice cream shop is coming to East Memphis, and it will likely have Mexican influences.

Permits for an establishment called El Sol de la Cherry were recently filed with the city. Owner Hugo Ramirez was not immediately available for comment, so very little is known about the venture at this time.

However, the permits reveal that the ice cream shop will occupy a building at 1531 Cherry Rd. Based on its name, El Sol de la Cherry will likely have Mexican influences, potentially featuring flavors like lime sorbet and horchata.
