Einstein Bros. Bagels is preparing to open a new restaurant at 401 S. Mount Juliet Road in Mt. Juliet, taking over the former KFC building, with franchise owner Nishant “Neil” Meraiya targeting an August opening, according to the Chronicle of Mt. Juliet.
Meraiya told the publication that renovations are underway at the former fast-food restaurant, with work expected to wrap up in time for the planned opening. Once complete, the restaurant will become Mt. Juliet’s fourth dedicated bagel shop, adding another breakfast option to the city’s growing dining scene.
The Mt. Juliet location is part of Meraiya’s broader expansion plans for Einstein Bros. Bagels in Middle Tennessee. In addition to this restaurant, he recently opened a location on Harding Pike in Nashville and has previously said he hopes to bring the brand to Springfield in the future.
According to Einstein Bros. Bagels website, the company was founded in 1995 in Lakewood, Colorado. Einstein Bros. Bagels offers freshly baked bagels, breakfast sandwiches, coffee, lunch sandwiches, baked goods and its signature shmears. The brand has expanded through both company-owned and franchised locations across the United States.
If construction stays on schedule, customers can expect the new Mt. Juliet restaurant to welcome its first guests on August 1.
