Popular Northwest Louisiana eatery Don Juanz Baja Beach Tacos is expanding its footprint south to Lafayette, and potentially beyond. Founded in 2006, the fast-casual concept is known for its distinct California-meets-Sonora coastal menu. Currently, owner Don O’Byrne is setting his sights on Lafayette as part of a strategic regional push. The upcoming location will be at 2011 Kaliste Saloom Rd. and is slated to open in the spring of 2026.

The upcoming Lafayette restaurant will feature the chain’s signature upscale fast-casual atmosphere, highlighting fresh queso, daily-made sauces, wild-caught seafood, and certified Angus beef.

O’Byrne recently told What Now New Orleans that he evaluated multiple expansion routes before committing to the Acadiana area.

“We never really considered anything south of Alexandria, and we’ve had opportunities to take this thing to Mississippi, to Florida,” O’Byrne said. “But Baton Rouge is next on the slate. I believe that I can grow this brand in Louisiana to its fullest potential before moving it out of state.”

As for Lafayette, O’Byrne pointed to a welcoming municipal environment and robust local growth as key drivers behind the decision to plant roots there.

“I see a government in Lafayette that is very business-friendly,” O’Byrne said. “They reach out for me. They answer their phones on the second ring. I always get knowledgeable, intelligent people giving me information.”

With over three decades of restaurant industry experience, O’Byrne emphasized that maintaining high operational standards is critical to the brand’s enduring popularity. As the upcoming spot prepares for its launch, future staff members can expect rigorous training centered around guest satisfaction and providing a consistent product.

“As soon as a person steps off the curb and opens the door to your restaurant, everything has to be on point,” O’Bryne said. “It has to be an exceptional experience for the guest to return.”
