Following its opening in Lafayette last year, fast-casual restaurant Fishbox Sushi is officially expanding across Acadiana with its second location coming to Broussard. The new sushi spot will be in a prominent retail center located at 6922 Ambassador Caffery Pkwy.
Founded by co-owner Timmy Nguyen alongside three business partners — including two on-site sushi chefs — Fishbox Sushi first debuted in September 2025 at The Waters at Settlers Trace development in Lafayette. It quickly built a local following with its flexible and affordable pay-by-weight model. Guests to walk in, pick up a container, and build their own meal. The self-serve layout features refrigerated display cases filled with fresh rolls, nigiri, tofu pockets, and torched sushi.
While the fast-casual structure is very approachable, Fishbox Sushi is able to incorporate high-grade fish and premium ingredients like toro (fatty tuna) and uni (sea urchin roe).
“We don’t believe in going cheap just to make a profit,” Nguyen previously told What Now New Orleans. “It’s the quality that makes us different: If you have good quality fish, the taste is different, and the smell is different.”
According to Developing Lafayette, expanding to Broussard was a natural progression driven by the city’s recent steady growth. The upcoming location will reportedly mirror the original Lafayette site, featuring a fresh-focused kitchen and an efficient layout for customer flow.
