Chef Daniel Humm Is Bringing a New Restaurant to New York’s West Village

Chef Daniel Humm is opening a new restaurant in New York City. It is the first restaurant to carry his name and will offer a menu focused on seasonal, modern American cooking. The menu will also have a strong emphasis on wood-fired cooking and shareable dishes.

HUMM by Chef Daniel Humm to Open This Month

HUMM, the new restaurant from chef Daniel Humm, is set to open at 435 Hudson Street on October 10. The restaurant carries Humm’s name and follows his work at Eleven Madison Park and Clemente Bar. Reservations for the restaurant opened on October 1.

According to Eater New York, HUMM is a more relaxed, à la carte restaurant compared with Eleven Madison Park’s elaborate tasting-menu format.

The menu will focus on seasonal, modern American cooking, with influences from Humm’s Swiss background, according to Eater New York.

Chef Daniel Humm is a Swiss-born chef, author, and owner of Daniel Humm Hospitality, the New York-based hospitality group behind Eleven Madison Park and Clemente Bar. He earned his first Michelin star at age 24 and has gone on to receive multiple culinary honors, including seven James Beard Foundation Awards. Eleven Madison Park has held three Michelin stars since 2012. Humm also co-founded the nonprofit Rethink Food and has used his platform to promote sustainable food systems. In 2024, he was appointed a UNESCO Goodwill Ambassador for Food Education.

The new restaurant is taking over the former En Japanese Brasserie space, which closed in December 2024 after operating for about 20 years. The restaurant will source produce from Magic Farms in Hoosick Falls, New York.

HUMM was designed by Pierre Yovanovitch and combines dining, art, and design. The space features a prominent wood-fired oven, an open kitchen, a dining room, a bar, and a lounge. According to Eater New York, artwork from Francesco Clemente, Rashid Johnson, Louise Bourgeois, and Roni Horn will also be featured at the restaurant.

What Will Be on the Menu

The Eater New York article shares a glimpse of the menu that will be served at HUMM. Some of the dishes planned for the opening menu include crispy feta with sesame and shallot agrodolce, tuna crudo, chicory and tangerine salad, and grilled fish. The menu will also include fried eggplant with pickled green tomatoes, roasted chicken for two, and milk and honey for dessert.

Guests can choose between the main dining room, bar, or lounge. The bar and lounge will offer smaller food menus, while the dining room will serve the full menu. The restaurant will also have a wine list featuring both established wine regions and smaller producers.

HUMM is set to bring a new dining experience to New York City’s West Village.
