A James Beard Award semifinalist is bringing a new eatery to the West Village.
Chef Camari Mick, known for her acclaimed pastry work at Raf’s and The Musket Room, will debut her own concept, Calabash. The restaurant will open at 183 Christopher St. this fall.
“Calabash. It’s a vessel that’s found throughout the diaspora. It’s used in music, food, art—something that we want to embody,” Chef Mick shared in an Instagram post.
The new spot will be an Afro-Caribbean brasserie and bakery, with a menu featuring authentic fare.
During the day, Calabash will serve laminated pastries, a natural choice from an Outstanding Pastry Chef, along with fermented bread and cornbread pancakes with salted maple sabayon. Coffee from Africa and tea sourced from Kenya will round out the offerings, EATER reported.
Dinner will follow with a prix fixe menu. One highlight the outlet shared is Chef Mick’s take on steak frites, featuring cuts of steak from Prince Abou’s, a Black-owned halal butcher shop in Harlem, with deep-fried plantains standing in for fries. The dish is finished with an au poivre sauce made with suya spices and topped with peanuts.
Desserts will include a sticky bun inspired by Jamaican gizzada and a chocolate chip cookie made with single-sourced chocolate from Jamaica.
An official opening date has not yet been announced. However, Calabash will host a special night for Chase Sapphire Reserve card members on Oct. 1 ahead of its grand opening.
The experience will include a $195 prix fixe meal with mocktails, some featuring lion’s mane mushrooms and vitamins, as Calabash has opted not to serve alcohol.
