The health agency reported that there were no adequate handwashing facilities in the kitchen. Food was stored at improper temperatures, with shrimp at 78°F and chicken at 80°F. The inspectors instructed that potentially hazardous food shall be held at or below 41°F or at or above 135°F.
Cockroaches in various life stages were found under the three-compartment sink, near the mop sink basin and ice machine, and beneath the food prep sink.
Health inspectors observed uncovered containers of raw chicken in the walk-in refrigerator and walk-in freezer. They also pointed out that raw shelled eggs were stored above ready-to-eat foods in the cold-top cooler.
They noted that ready-to-eat foods must be stored above or separately from raw animal products. Household insecticides were found stored next to the water heater. The violation description mentioned that all poisonous substances, detergents, bleaches, and cleaning compounds shall be stored separately from food.
Grease and grime accumulation was observed on many parts of the facility- the wok equipment, exterior surfaces of the fryer and inside of the fryer cabinet, legs of the dunnage racks, shelving of the dry storage racks, exterior basin of the 3-compartment sink, food preparation sink, and mop sink. Follow-Up Inspection
Health inspectors temporarily suspended Big Chopstick Express’ permit to operate and ordered the establishment to close. The restaurant may request a reinspection once all violations outlined in the inspection report have been corrected.
