A new restaurant is bringing authentic Roman Pinsa, the oval-shaped flatbread similar to traditional pizza but with a history all its own, to Orlando.
Opening at 7823 S Orange Ave, Daje Pinsa will serve Pinsa Romana in a fast-casual format, allowing guests to “choose from a variety of traditional and creative toppings made with high-quality Italian ingredients and fresh local products,” founder Gabriele Uberti told What Now in an email on Wednesday. “Alongside our savory pinsas, we will offer desserts, beer, wine, and non-alcoholic beverages… Our goal is simple: serve an authentic Italian experience that is approachable, affordable, and consistently delicious.”
The approach brings together traditional flavors with a tech-forward, fast-casual approach that is all contemporary.
“At the same time, Daje Pinsa embraces a modern and contemporary approach to dining,” says a provided description. “We have intentionally designed the restaurant around the latest technology to create a seamless, frictionless guest experience. The restaurant is completely cashless, and orders are placed through self-service kiosks that allow guests to select their meal quickly and easily.”
The concept builds on its founder’s broad experience in Italian food and pizza.
“Gabriele Uberti spent the last 16 years building his career with Patina Restaurant Group by developing such concepts as Via Napoli, Tutto Italia, Pizza Ponte and Space 220,” says recent coverage by Orlando Weekly. “He also played a critical role in rebuilding Disney’s Italian Cultural Representative Program by bringing in and mentoring hundreds of young Italians in an effort to restore the cultural connection between the U.S. and Italy.”
The menu at Daje Pinsa will feature pinsas with the flavor profiles like Daje (mozzarella, ricotta, black olives, ham), Bella Roma (buffalo mozzarella, prosciutto, mushrooms, parmesan, white truffle oil), and Gamberetti (shrimp, mozzarella, zucchini, cocktail sauce).
“While the technology is modern, the atmosphere is deeply rooted in Italy,” the description continues. “The space is anchored by a striking Roman-inspired red brick arch that serves as the focal point of the dining room, bringing a sense of timeless Roman character into a contemporary setting. Warm materials, authentic Italian details, and carefully selected design elements create an environment that feels both vibrant and welcoming.”
Uberti told What Now on Tuesday that no opening date has been set yet, but the Orlando Weekly coverage says a fall opening is in the offing.
