A fast-casual burrito concept will open at Bethlehem’s Stefko Boulevard Shopping Center at 1880 Stefko Blvd. in 2022. The Morning Call reports that This Is Burrito will occupy a 2,000 sq. ft. space in the shopping center that previously housed J’s Steaks & Subs.
This Is Burrito will serve made-to-order burritos where customers choose a protein, like beer or chicken, then add other items like lettuce, salsa, cheese, and other ingredients. In addition, This Is Burrito will also serve tacos and other Mexican fare.
This Is Burrito, an offshoot of This Is Wings & Seafood, is currently under construction. An opening date has yet to be announced. It is owned by Karen Lin. Stefko Boulevard Shopping Center is owned by Regency Centers. The lease for This Is Burrito was brokered by Vice President of Colliers International Allentown Scott Horner.
