A beloved pop-up ramen shop, known for its bold salty, sweet, sour and savory flavors, will open a permanent location this winter.

Tenmomi, owned by KC Gonzalez, aka Chef Salty, will open inside the Williams Center at 15 Sylvan St. in Rutherford.

The center, an artist-run arts space, concert venue, event hub and underground cinema, is a lively community gathering spot, especially when paired with food.

“I’m excited because, doing pop-ups and a nightly ghost kitchen business, I’m banking on their business to end earlier so I can set up. It’s a lot of moving parts. Now, with the permanent spot, I don’t have to worry. It’s mine,” Gonzalez told What Now Philadelphia.

Tenmomi currently operates in Westwood inside Lepore’s Italian Deli, with its final day on February 22, according to the website.

The menu includes a craft-your-own ramen bowl and signature dishes such as the Original Miso Spicy Ramen with pork, chicken broth, housemade miso, seasonal vegetables, egg, furikake and drama oil; Sinigang Ramen, a Filipino favorite with a tamarind (sampalok) base, tomatoes, onions, fish sauce, pork confit, vegetables, garlic furikake and drama oil; and Chicken Shoyu Ramen, featuring 48-hour chicken bone broth, sous-vide chicken thigh, vegetable scallions and drama oil.

Drama oil, which went viral on TikTok, adds a rich garlic-umami flavor to any dish.

“This garlic-filled golden oil works similar to how a chili oil adds spice, while our Drama Oil adds burnt garlic goodness, drizzle it, toss it, dip it, love it,” Gonzalez shared via Instagram.

In addition to his acclaimed ramen, Gonzalez said he will debut a wings menu, along with fried chicken sandwiches and burgers, putting his own spin on these American classics.

Gonzalez brings more than 20 years of experience in both fine dining and corporate-style restaurants. He plans to debut Tenmomi on March 2.
