Wondaffle to Sweeten Bethlehem in 2025

The new concept, which pairs ice cream and waffles, is aiming for a late January or early February opening.

The Lehigh Valley’s undisputed ice cream kings are back at it, this time with an assist from waffles. Manny Rodgriguez and Rick Pongracz, the brains behind Batch Microcreamery, are bringing a new concept called Wondaffle to the region in 2025, reports local media outlet WFMZ.

The unique concept which sets out to pair two sweet favorites-ice cream and waffles- will begin delighting South Bethlehem diners in its home at 307-311 East Third Street early next year. Wondaffle is aiming to open in late January or early February of 2025.

Wondaffle is the newest iteration of a concept previously explored by Rodriguez and Pongracz; The original vision for the eatery was referred to as Batter Up. However, the name abutted against a company that already claims that nomenclature. .

Wondaffle will be able to accommodate around 40 hungry guests. The menu will feature 16 flavors of Batch Microcreamery ice cream, 10 to 12 of which will be standards, with space for some rotating seasonal selections.  

Speaking of what Lehigh Valley diners can look forward to, Pongracz states “We’re very excited. We think that combining our high-quality product of ice cream with high-quality, hand-crafted waffles is something that our existing customers and new customers will really enjoy.”
