Rosewood to Bring an Upscale Dining Experience to Gilbert

Local restaurateur Charles Barber, Jr., is bringing a new dining destination to Gilbert.

Rosewood, a new concept for the chef and his Aftermath Restaurant Group, will open at 366 N. Gilbert Road, in the former Lolo’s Chicken and Waffles space, according to an Instagram post. The restaurant and lounge is projected to open March 2026, with a window possibly opening sooner than the dining room. Rosewood was originally slated for a January 2026 opening, but construction was briefly paused, according to the restaurant’s Instagram, and has now resumed with a slightly altered timeline.

Fabulousarizona.com  reports that Rosewood will offer an upscale dining experience with, “elevated dishes crafted with locally sourced ingredients, bold cocktails, and a sophisticated late-night lounge that brings a new dimension to Gilbert’s nightlife scene.” At this point, a complete menu is not available, but according to Phoenix New Times, he and his team are working on both the food and cocktail menus. Customers can, however, expect a completely different menu from his other concepts.

Barber is known in the Phoenix area for his restaurants, Aftermath Bar & Kitchen, which opened in 2021; and Born & Bred in Chandler and Scottsdale.  This will be Barber’s first Gilbert restaurant.
