According to a recent job post, Boxer Ramen will be expanding to another location in Cedar Hill, located at 3205 SW Cedar Hills Blvd.
A representative of Boxer Ramen was not immediately available for commentary upon What Now Portland’s request.
While an official opening date has yet to be confirmed, according to the company website for MMMCo which backs Boxer, Boxer Ramen has been in operation since 2013.
MMMCo additionally states that Boxer offers four different types of ramen as well as sides, sushi, sake, and cocktails. “Boxer continues its legacy in a larger, more capable space. Like all of our restaurants, we only use local ingredients to ensure you’re slurping top-notch noodles.”
Willamette Week, in an article from February of last year, states that “Two of the city’s well-known restaurateurs, Micah Camden and Katie Popp (Little Big Burger, Blue Star Donuts), founded Boxer Ramen in 2013. A second location followed two years later, and it eventually grew into a mini-chain with five shops across town before the statewide-mandated COVID-19 lockdown in 2020.”
Boxer Ramen, before its rebranding after its closure, was known as Boxer. Since then, they have expanded their menu options. Some of these options include curry, pot stickers, and more, in addition to their ramen menu.
