Colibri, an extension of Tamale Boy with its own separate foundation, will soon open in the Pearl District at 1208 NW Glisan Street, confirmed by its owner Jaime Soltero.
“We don’t have a locked-in opening date as of yet, but it will definitely be this summer. Hopefully sometime this September,” Soltero told What Now Portland.
“The name Colibri means hummingbird in Spanish and was inspired by a conversation I had with my wife. This time around we will be having a full bar, and with hummingbirds being special to her, the idea will be the hummingbird getting its nectar.”
Jaime will be focusing on creating Sinaloan dishes, specific to that region. Some common Sinaloan dishes would be tacos gobernador, aguachile, chilorio, etc.
For those that are unfamiliar, tacos gobernador are tacos named after a Sinaloan governor, made with a combination of shrimp, grated cheese, coriander, onions, and tomatoes. Aguachile is a type of ceviche that commonly also features shrimp, cucumber, red onion, and more veggies, while chilorio consists of fried pulled pork cooked in chili sauce and spices.
As for the aesthetic of Colibri, the decor will remain simplistic in this smaller space. Jaime hopes to be able to hire three local Latin artists to create three murals for the interior walls to elevate the space.
