According to a recent permit filing, Fried Egg I’m In Love will be expanding its reach to the Boise area at 980 N Fremont St.
A representative of Fried Egg I’m In Love did not immediately respond to What Now Portland’s request for comment.
While an official opening date has yet to be released, the story of Fried Egg I’m In Love is described as a tale of determination, friendship, and the irresistible allure of a perfectly cooked fried egg sandwich. Jace Krause, fueled by a love for cooking, a dream of entrepreneurship, and the desire for creative liberation, embarked on a journey that would transform a humble food cart into a cherished culinary icon in Portland.
For Krause, the path to culinary fame was not paved with formal business training. Armed with a passion for writing, a penchant for music, and a knack for crafting delectable fried egg sandwiches, he stood at a crossroads. As the idea of a food cart began to sprout in his mind, a move to Portland would eventually solidify his aspirations.
Having relocated to Portland from Sonoma, CA, Ryan Lynch, Krause’s bandmate and friend, joined forces with him. Lynch, formerly employed in sales at the Oregonian, longed for an opportunity that would meld his love for engaging with people and endorsing a product he genuinely believed in.
Cooking was a family legacy, instilled by Krause’s mother Mary, and grandmother Ethel, whose simple yet delicious dishes held a special place in his heart. The art of cooking remained dormant until a fateful drive between Portland and Seattle, where Krause confided his food cart aspirations to Lynch. It was Lynch’s first taste of Krause’s culinary delights that sealed the partnership.
With a splash of humor and a dash of audacity, the duo transformed their food cart concept into a vibrant reality. Clad in bright yellow, the cart opened its windows on April 1, 2012, unleashing a unique culinary experience onto Portland’s streets. Success followed, prompting Krause to take sole ownership of the venture in 2017 and expand to multiple locations, including Pioneer Courthouse Square and N. Mississippi Ave. in the Prost! Marketplace food cart pod.
Through resilience and innovation, Fried Egg I’m In Love ventured into new horizons, introducing a mobile food truck for catering and events in the summer of 2021. The business even embraced the digital landscape, offering online pick-up and delivery orders through their “ghost kitchen,” according to their website.
