A new small-plates dining destination is making its way to Auburn.
Jordan and Melinda Minyard—the husband-and-wife duo behind The Pour Choice craft coffee bar—are preparing to launch The Hillmont at Remedy Supply Co. The new restaurant will be housed in a two-story, 8,000-square-foot building at 875 Lincoln Way, reports the Sacramento Business Journal.
Though the menu is still taking shape, Jordan told What Now Sacramento that The Hillmont will be “small-plate driven,” with dishes crafted by chef Ashley Strickler, who also oversees the food program at The Pour Choice.
“The whole idea… it’s really about building relationships and community with people,” Jordan explained. “We think shared food builds conversation. So if you and I sit down and get two or three or four things, then it’s a fun way to try different stuff and then to also talk about the food.”
The beverage selection will include cocktails, bottled beer, a curated list of clean, holistic wines, and a full espresso bar—though the focus will remain on afternoon and evening service.
Designed to evoke old European charm, the restaurant’s exterior features intricate brickwork, while the interior promises an open and airy feel with skylights, a “giant” tree, an open kitchen, and seating for about 100 guests. Remedy Supply Co.—the Mineyard’s in-house coffee company—will continue to operate from the back of the building.
At the heart of the restaurant will be a striking pentagonal bar, centrally located in the dining room and flanked by cozy snugs on either side. A spacious sound stage will host live music, and a retail component is also in the works.
Construction is in full swing, and The Hillmont at Remedy Supply Co. is expected to welcome guests in early July 2025, said Jordan.
