A new hospitality concept called Cut Club appears to be headed to downtown Seattle

A new application filed through the Washington State Liquor and Cannabis Board lists Cut Club at 612 Stewart St, with Melissa Emiko Gerber and Travis Gerber connected to the proposal. 

Few details about the concept have been released so far, and no opening timeline has been announced. The proposed address occupies the former Miller’s Guild restaurant space near Hotel Max in downtown Seattle. 

While ownership has not publicly shared a menu or formal description, the license filing offers some clues about the direction of the business.

The application includes licensing for a spirits, beer and wine restaurant lounge, alongside catering and premixed cocktails and wine to-go. 

Those approvals suggest a hospitality concept built around both food and beverage service, with a lounge or cocktail component and operations extending beyond traditional dine-in service.
