Here Today Brewery & Kitchen plans to open three food-and-beverage concepts inside the former Theo Chocolate building at 3400 Phinney Ave. N. in Fremont, according to the Puget Sound Business Journal.
The upcoming lineup includes Good Bones Coffee, a coffee concept; Glitter Paw Lounge, a cocktail and snack bar; and Marigolds, a small cocktail and oyster bar. All three are expected to open in fall 2026.
The Glitter Paw name already appears in Here Today’s beer lineup. The brewery describes Glitter Paw Hazy IPA as its best-selling hazy IPA, made with Citra and Mosaic hops.
Chris Elford is the co-founder and CEO of Here Today. The business was founded in 2018, and its waterfront brewery and taproom opened in fall 2022 at 2815 Elliott Ave., Suite 101.
The three Fremont concepts will occupy part of a 121-year-old red-brick landmark originally built as the Fremont Trolley Barn in 1905. The building later housed Redhook Brewery’s production facility and Trolleyman Pub. Theo Chocolate used the property as its factory and flagship location before ending factory operations there in 2023 and closing its retail store in 2025.
The property is being redeveloped for several tenants. Here Today will operate three of the planned food-and-beverage concepts, expanding beyond its waterfront brewpub into Fremont.
The property’s redevelopment will introduce several new tenants to the former industrial building. Good Bones Coffee, Glitter Paw Lounge, and Marigolds will establish Here Today’s presence in Fremont and return multiple hospitality businesses to a property with a long history in Seattle’s beverage industry.
