Founded in 2003, Costa Vida Mexican Kitchen began in Layton, Utah, with an idea launched by founders Kenny Prestwich and JD Gardner. Since then, it has brought its Mexican-inspired fast-casual offerings to more than 90 locations all over the country.
Now, Costa Vida is preparing to make its debut in Florida with a new location opening in Palm Harbor, at 33505 US Highway 19 N.
Behind the new Costa Vida is franchisee Morgan Smith, who heads up one of the brand’s most successful franchise groups. Though the company is now focused on growing by way of corporate stores, Smith says an exception was made to let him bring the brand back to his hometown.
“I was born and raised in Tampa, and I learned about franchising from a college roommate whose grandmother owned a few Subways, and whose uncle owned a Costa Vida in Georgia,” Smith said. “That’s where I first tried it, and it rocked my world. I didn’t know food could be that good!”
Smith’s group has 13 locations and counting, with plans to open two more in the Tampa Bay area.
Costa Vida’s menu features entrees like Burritos, Enchiladas, Quesadillas, Tacos, and other classic favorites. Guests select from proteins like Sweet Pork, Shredded Barbacoa Beef, Grilled Steak, and Raspberry Chipotle Chicken, along with toppers like Black Beans, Baja Red Enchilada sauce, and Tomatillo Cilantro Sauce. When Smith had his unforgettable first bite, the order was a Sweet Pork burrito, which comes highly recommended.

“We’re super excited to be in there,” says Smith. “I grew up there, and it’s super awesome to come back and be in the community after being gone for 8 years, and to share food with local business, schools, and the whole Tampa Bay area. You can see, with us opening the first location in the state of Florida and choosing Palm Harbor, how much we believe in the city and the county.”
