Dear Grain Bakery Expanding to Hamilton’s East End

Dear Grain Bakery, a Toronto-based bakery specializing in handmade sourdough bread, pastries, coffee, and artisanal pantry goods, is getting ready to open a new location in Hamilton’s east end, steps away from Gage Park.

The company’s second location was recently revealed by the brand and first reported by UrbanCity. While an exact opening date has yet to be announced, the expansion will bring Dear Grain’s signature sourdough breads, pastries, and coffee program to a new part of Hamilton. Customers can expect a menu built around slow fermentation, heirloom grains, and scratch-made baked goods. Co-founder Adri Greenspan tells Whatnow Toronto that the production bakery is expected to open in “fall 2026” and the storefront is due in “early 2027.”

Dear Grain currently operates locations in Toronto’s Ossington and Roncesvalles neighborhoods, along with a storefront at 103 Vine Street in Hamilton. The bakery has built its reputation around naturally leavened sourdough bread made with locally sourced organic and heirloom grains. According to the company’s website, its baking process combines high-hydration dough with fermentation periods ranging from 12 to 36 hours. The approach is intended to create bread with a crisp crust, open crumb structure, and extended freshness.

The company describes its mission as bringing sourdough bread back to the center of everyday meals. Dear Grain also places a strong emphasis on supporting local agriculture and highlighting the connection between farmers, bakers, and the broader community. Its pastry program follows the same philosophy, with all items made from scratch using carefully sourced ingredients.

The bakery’s bread selection includes staples such as the Classic Country Loaf, Super Seeded Loaf, Silhouette Pan Loaf, and Multigrain Porridge Pan Loaf. Customers can also find rotating specialty loaves featuring ingredients such as cheeses and seasonal additions. The company’s products are made with a variety of organic and heirloom grains chosen for their flavor and nutritional qualities.

Beyond bread, Dear Grain offers sourdough croissants, pastries, sandwiches, scones, cookies, muffins, loaf cakes, babkas, and pizza slices. The upcoming East Hamilton location will give customers another place to access the bakery’s full lineup. This will be an excellent landing space for Dear Grain, given the area’s established residential community and proximity to one of Hamilton’s most popular parks.
