Terrain, a new restaurant inspired by the land, seasons, and people around it, is set to open at The Clayfield Hotel in Niagara-on-the-Lake at 18 Clayfield Commons.
The restaurant is scheduled to open in August 2026, according to the company’s website. It will serve as the social heart of The Clayfield Hotel and a key component of the larger Clayfield Commons development, created by the families behind The Village and Stratus Vineyards, according to Insauga. Project co-owners John Hawley and David Feldberg are behind the hotel project, while Ascari Group will develop and operate Terrain. Chef Joel LaBute will lead the kitchen, offering wine country cuisine inspired by Niagara’s wineries, growers, and cultivators.
Clayfield Commons is planned as a walkable mixed-use district featuring restaurants, bars, cafés, retail spaces, cultural amenities, and a hotel centered around a public square. The development is intended to create a gathering place for both residents and visitors. Terrain will support that vision through its restaurant, lobby bar, and seasonal outdoor spaces designed for dining and socializing.
The Clayfield Hotel was designed by Sid Lee Architecture, with inspiration drawn from the region’s landscape and geology. The building incorporates a rounded form, vertical wooden elements, and layers of concrete that reference vines growing through clay soil. Inside, the design reflects the seasons, with different spaces drawing inspiration from spring, summer, and harvest time.
Terrain’s menu will focus on wine country cuisine rooted in local ingredients and seasonal availability. The restaurant aims to showcase the agricultural products that have helped define the Niagara region while creating a dining experience that appeals to both locals and travelers.
The property will also feature a lobby café and The Terrace, an outdoor gathering space centered around food, wine, cocktails, and music. This will be an excellent landing space for Terrain, bringing together the region’s culinary, wine, and hospitality communities in one destination.
