After Delay, Pikey Coffee to Open Its Doors This Summer

Right where Spring Valley, Enterprise, and Paradise meet, Phil and Erin Shipley are planning to open their new coffee shop, Pikey Coffee. The café, whose name is an homage to the Traveller community of Phil’s native United Kingdom, will offer coffee, blended drinks, energy drinks, and small eats.

Like many restaurants caught up in the permitting backlog of the strange post-but-not-quite-post-COVID gastroscape, the opening of Pikey’s first location on Decatur Blvd has faced delays throughout its opening process. The coffee shop is now working towards an opening in June, Phil Shipley told What Now Las Vegas in a phone conversation on Thursday morning.

Details of the café’s menu remain scarce, although it is still expected to feature a soft-serve machine whose ice cream will be paired deliciously with espresso in affogato and with cold brew coffee cold brew floats. On the food side, pastries, donuts, and other baked goods will be supplied by local bakeries.

“It[‘s] a perfect location,” Shipley told What Now Las Vegas last year. “There are a lot of offices behind it, and it’s a new build, with new construction all around. And it’s just ten minutes off the strip. It’s a local spot, with a lot of local traffic.”
