Boulder Station Hotel & Casino’s community of tasty dining destinations looks to be gearing up to welcome a new outpost of Tacos El Pastor. Business license paperwork filed recently with Clark County appears to reflect plans to open at a location at 4111 Boulder Hwy, the address of the resort. It would be the third location for the Las Vegas-based chain of Mexican restaurants.

Tacos El Pastor serves Mexican-style tacos, burritos, sopes, and mulitas with a variety of proteins, including Pastor (marinated pork), carne asada, chorizo, carnitas, cabeza, lengua, and others. For those unfamiliar, a sope is a dish with a thick pancake-shape fried masa (corn dough) base, and a mulita is a bit like a quesadilla, except with two separate tortillas—it has been described as a Mexican grilled cheese.

Sides include fries come with cheese and asada, lengua, or pastor; nopal (cactus); and chorizo.

Boulder Station is home to a number of eateries, including steak and seafood restaurant The Broiler; American breakfast, lunch, and dinner joint The Brass Fork; and Slices Pizzeria.

Further details on a Boulder Station Tacos El Pastor location are unavailable at this time. Representatives of the company were not immediately available for comment.
