Paloma Restaurante is bringing a unique fusion of Mexican and Italian cuisines to Collingswood later this year. Partners Tim Dedja, Jorge Reyes, and Aurora Vojnika aim to open the establishment on Labor Day weekend, reports local media outlet 42 Freeway.
Paloma Restaurante will take over the 1,524 square-foot space vacated by the Tortilla Press at 703 Haddon Avenue.
Each member of the Paloma team bring a unique strength to the project. Dedja owns and is the chef at The Boiling House. Reyes crafts the cuisine at Orales Tacos. Vojnika, who owns the West Main clothing line, brings a unique interior decorator’s eye to the table.
Vojnika’s perspective will prove particularly beneficial, as the three intend to fully renovate the space.
Collingswood is a dry town that does not allow for full liquor licenses, so Paloma will not have a drinks menu. However, the partners are dedicating the time between now and the opening to developing a food menu that highlights the best of both Mexican and Italian cuisine.
