A new restaurant is in development at 303-305 Broome Street, under the business name Broome Bistro and Cafe LLC. The details of the restaurant, including its official name, are yet to be announced. Despite the limited information, the project is generating interest among the city’s dining community.

Owner Gray Ballinger has kept details about the Broome Street project close to the chest. In communication with What Now New York, Ballinger stated, “… [we] are not ready to comment on the Broome street project or concept,” indicating that more information might be available closer to the opening date.

Ballinger did tease a pop-up happening at 22 Orchard Street running throughout February 2024 as a preview of what might be expected at the Broome Street location. The pop-up is featuring wood-fired bagels, handmade pastries, and organic coffee by way of The Mud Club — a bagel shop and cafe with locations in Woodstock and Beacon, NY.

The pop-up serves as both a testing ground for their food concepts and an opportunity for interaction with the community. Ballinger’s invitation, “This will hopefully segue into Broome street but feel free to stop by and say ‘hi,'” welcomes patrons to get a first look at the culinary approach they are planning to bring to Broome Street.
