A pair of celebrated New Jersey restaurateurs are preparing to bring fresh, hot pizza to Haddonfield. Walter Gouldsbury, III and David Murray, who initially made a splash in the Garden State’s dining scene with sandwiches and burgers, will begin serving their own innovative spin on pizza out of a brand new concept called Umile Trattoria later this year, reports local media outlet NJ Pen.
Gouldsbury and Murray will be opening their new restaurant at 211 Kings Highway East, a space that formerly housed Earth Eats Cafe. An official opening date for Umile is not yet available, however Earth Eats only closed shop recently, so the storefront will need to be modified to fit the pizzeria’s needs. Foremost among the new eatery’s requirements: space for a very particular oven.
Umile will serve a distinctive brand of pie that fuses American and Neopolitan styles. Murray, Gouldsbury and their third partner, Ricky Coppick, will be using a steam-injected, triple-deck oven to craft their unique cuisine.
Murray explains that this tool is essential to making Umile’s pizzas. “It complements the style of pizza we’re going to be doing. It’s going to be able to give us a puffy crust married with crispness on a consistent basis: light, airy, and crunchy.”
Umile intends to use locally-grown, seasonal ingredients to create incredibly high-quality pizzas. The restaurant is partnered with Black Sheep Farm to source the raw materials needed to ensure the best possible pies.
Umile’s menu will feature five year-round pies and five seasonal rotations. While pizza will be the star, the trattoria will also serve salads, pastas, and various small plates.
Gouldsbury explains that the partners’ mission is to bring Haddonfield unique cuisine without sacrificing any quality. He states: “We’re trying to do something a little bit different. Haddonfield has a very hopping downtown business district. We’re trying to open as many places in town as we can, bringing quality and consistency of product.”
