All three incoming establishments will be located at The Quoin Hotel at 519 N Market St, Wilmington, DE 19801. A representative for the hotel’s operating entity told What Now Philly all three concepts will open early this fall.
The Quoin Restaurant will include a “Mediterranean-influenced wood-fired menu” while Simmer Down will be a “crafted cocktail-focused speakeasy.” The Rooftop at The Quoin will “serve as the perfect spot for happy hour, social gatherings, and light fare. “
The hotel itself is “housed in the historic Security Trust & Safe Deposit Company Building” and will have “24 luxury hotel rooms, a lobby fireplace cafe and bar, a 155-seat ground floor restaurant with courtyard dining, a lower-level cocktail lounge, and Wilmington’s first rooftop bar and event space.”
The Quoin is owned by local developer Buccini/Pollin Group, but is being developed and will be operated by Method Co. – a Philadelphia hospitality company. Method Co. was founded by Randall T. Cook and David Grasso. The company’s focus is “to create singular, authentic hotels, apartment hotels, and restaurants throughout the United States” with the intended results being “iconic destinations that are lasting and special.”
It’s currently unclear where The Quoin Restaurant and Simmer Down will reside within the hotel.
