Elevated Brunch Restaurant, The Raven, Set to Open in Simon’s Silk Mill

The Easton eatery will be the first for owner Raven Gabriele.

The Raven, an elevated brunch and breakfast spot, will be serving an impressive mix of sweet and savory to Easton later this summer. The restaurant, located at 669 North 13th Street, Suite A102 aims to open its doors in July, reports local media outlet 69 WFMZ News.

The restaurant will seat up to 40 guests inside with six to eight outdoor tables available.

The Raven’s owner, founder, and namesake, Raven Gabriele, spoke to What Now Philadelphia about opening the establishment. Though Gabriele has worked in the industry since she was 16 years old, The Raven will be her first restaurant. 

She chose the Easton location with considerable care, stating “I had looked at a bunch of locations…it was the first place I could truly see myself working in.”

Gabriele has accumulated a wealth of hospitality knowledge, both practically and academically. The entrepreneur studied marketing and business management at Kutztown University. She is currently serving as Miller’s Ale House’s front-of-house manager, a position she will cede to open the Raven.

She is currently working on creating partnerships with local merchants to source ingredients for her unique menu items, ranging from blackberry jam grilled cheese to cake batter pancakes. 

Brunch allows Gabriele to offer a range of items, both sweet and savory, that are quicker and easier to prepare than other dishes. 

Gabriele collaborated closely with her head chef, a friend she’s worked with previously, to develop the Raven’s distinctive menu. She’s currently seeking a sous chef and one to two more cooks.

Gabriele says she received the keys to the restaurant this Monday and is currently working on redecorating the space. 

The Raven will be a family affair for Gabriele, her mother, her sister, and her father. The entire family will participate in operating the restaurant. 

The Raven is on target to open in July. The BYOB establishment will be open Wednesdays through Mondays.
