Fort Collins Rio Grande Enhances Outside with New Bar

The Fort Collins location of Rio Grande Mexican Restaurant is undergoing some renovations. A new outdoor bar will be built at the eatery, which is in Old Town at 143 W Mountain Ave. 

Permits filed with the city show that the company is seeking permission for “construction of a 213 sq. ft. addition” for an outdoor bar. The documents also list a request for a 150 sq. ft. remodel of the kitchen’s walls, ceiling, electrical, and plumbing.

The work that will be done at the property is valued at $200,000. Thunderpump Construction and R 3 Design Architecture were both listed in the details for a commercial addition permit. 

A Tex-Mex style joint started in Colorado in 1986 and has grown to several locations in the state’s bigger cities. The Fort Collins spot is the original location of the chain.
