A small-town coffee shop is looking into growing beyond its original location in Eagleville, Tennessee. Just two years after its debut, Grindstone Cowboy will open its second location in Shelbyville at 100 Spring Street with an opening timeline slated for fall 2025, according to its owners.
Husband-and-wife musicians Mindy and Craig Campbell are spearheading the expansion after seeing success from their location in Eagleville where they host weekly events like open mic night, bingo, and trivia. Grindstone Cowboy has something for everyone, including a large breakfast and lunch menu, signature lattes, wine and beer on tap, and specialty cocktails.
What Now Nashville spoke with Mindy to learn more about the future Shelbyville site.
“We are excited about the event space on the 2nd floor. We will have concerts, weddings, receptions, and other events,” Mindy stated.
When asked about the standout menu items, Mindy gave a few of her favorites. “My favorite food item on the menu is our Boss Hogg Sandwich. My favorite latte is the John Wayne outlaw latte,” she said.
Grindstone Cowboy was originally founded by the Campbells to create a community gathering space in Eagleville. Having a restaurant, coffee shop, bar, and music venue all under one roof gives local families, students, and musicians a haven to come and enjoy a cup of joe or get some good grub, all while supporting a small business.
Operating hours are from Monday – Friday, 6 a.m. – 4 p.m. and Saturdays from 7 a.m. – 3 p.m. When concerts or events are scheduled, they close at 10 p.m.
