Fast-casual dining’s healthy revolution is continuing to spread through the DMV, this time with an assist from the Empire State. New York-based Springbone Kitchen has signed on to open its first DC location, reports the Washington Business Journal.
The chain will be making its auspicious DMV entrance at 1426 Wisconsin Avenue NW. The 1,500 square foot space has a history with health-focused eateries, having previously housed vegan eatery Shouk.
DC foodies eager to sample Springbone Kitchen’s fare won’t have to wait too much longer; co-founders Sam Eckstein and Jordan Feldman anticipate opening the inaugural DMV storefront in late April or early May.
Eckstein explains to What Now DC that DC provides both demographic and geographic advantages. District residents, he states, are hungry for more nutritious dining options that don’t sacrifice flavor or quality.
“DC is a hub for smart, hardworking young people. That demographic understands what we’re all about and appreciate the value we bring when it comes to raising the bar for healthy food in restaurants,” Eckstein says, adding “Also, we want to be physically present as much as possible in all of our restaurants, so choosing a location that is easily accessible from NY was an important consideration.”
Eckstein and Feldman founded Springbone in Greenwich Village in 2016, with the objective of bringing simple, straight-forward, healthy, and delectable cuisine to the fast-casual market. The menu features a range of soups, broths, bowls, and sides.
