Insomnia Cookies Preparing to Sate Bethlehem Sweet Teeth

The beloved Philadelphia-based bakery will be making its Lehigh Valley debut this summer.

The City of Brotherly Love’s favorite cookie company is preparing to bring its well-earned heat to Bethlehem sweet fans. Insomnia Cookies will be opening its inaugural Lehigh Valley bakery later this year, reports local media outlet 69News.

The decadent chain will be setting up its ovens in the new Six 10 Flats luxury apartment building. Local cookie fans won’t have to wait too much longer to indulge their sweet teeth; Insomnia plans to serve up delicious treats from the ground floor of 606 East Third Street at some point this summer, though a precise opening date is not yet available.

The building permit posted in Insomnia’s window-to-be describes the work required for the space as “interior fit-out of existing vacant commercial space” for “bakery—Insomnia Cookies”, however construction has not yet begun on the location.

Insomnia Cookies was founded and launched by then-Penn student Seth Berkowitz in Philly in 2003. The chain started out as a means for students to satisfy late night cravings as they crammed for exams and completed assignments. However the popularity of the brand has transcended the university scene, and now Insomnia Cookies has more than 300 locations across the country.

As the name suggests, Insomnia Cookies cultivated its now-massive fanbase through delicious, warm cookies. The menu has expanded to include cookie sandwiches, ice cream, and cookies cakes.
