The previous inspection at the restaurant was conducted in October 2024. It received a score of 70 in the routine inspection and faced two consecutive follow-ups within the same month, in which it scored 72 points and 94 points, respectively.

Inspection Summary

The person in charge was cited for not maintaining active managerial control, as multiple violations were observed during the inspection.

Several food items were found uncovered in the walk-in cooler, walk-in freezer, and pizza window. This was noted as the second consecutive violation.

The inspectors also observed improper cooling methods and several TCS foods that did not reach 41°F within four hours, which were repeat violations. Cold-holding violations were reported as well, with several items stored above the required 41°F. Corrective actions included discarding or relocating food items.

Chemical storage issues were noted, including bleach and degreaser bottles hanging near food and other chemicals stored above food and single-use items. These were moved during the inspection.

Inspectors also noted improper cooling procedures, with food being cooled in high-activity prep areas. This was marked as a repeat violation. Inspectors advised cooling in the walk-in units and smaller batches.

Food contact surfaces were unclean, including a mold-like substance inside the ice machine. Nonfood-contact areas, such as prep cooler fans, stove, and fryers, had food debris. The facility was also cited for dirty floors and walls in several areas.

Employee personal items and food were found stored with customer food. The items were removed from the area as part of corrective actions.

Improper use of the vegetable sink was observed, including a hose and utensil inside the sink. This was also a repeat violation. The sink was cleaned and sanitized as corrective action.

Equipment maintenance issues were reported, including a prep cooler not maintaining proper temperature and ice buildup in the walk-in freezer. These were cited as repeat violations.

Follow-Up Inspection Details

BiBa’s Italian Restaurant will face a follow-up inspection within 10 days, as per the inspection report. Unresolved issues from the inspection must be addressed prior to the follow-up. It will have to score a minimum of 70 points to pass the inspection and continue operations.

It will be important for the restaurant to avoid a third consecutive violation of the six food code provisions that were violated for a second time during Tuesday’s inspection in the upcoming inspections. In that case, the restaurant may face permit suspension and other actions by the Health Department.
