Jack’s BBQ is firing up a new location in Federal Way as the Seattle-based barbecue restaurant continues its regional expansion.
According to its website, the new outpost will open this summer at 31254 Pacific Highway S., just off Highway 99, north of The Commons and west of the incoming light rail station.
“We will be opening during the summer of 2025 and will be serving up all the smoked meats and Texas-sized deliciousness you’ve come to know and love,” the site reads.
The menu will feature Jack’s signature brisket, ribs, sausage, pulled pork and chicken, along with appetizers like fried pickles with okra and jalapeños, and buttermilk hush puppies served with tartar sauce and honey butter. Diners can also expect salads, chili and homemade desserts. Food will be available for dine-in, pickup and delivery.
In addition to its food offerings, Jack’s will serve craft cocktails made with whiskey, tequila and vodka, plus a curated selection of beer and wine.
The Federal Way location will serve breakfast tacos and coffee from 7 to 11 a.m. Monday through Friday, followed by regular service from 11 a.m. to 8 p.m. Weekend hours are 10 a.m. to 9 p.m.
Jack’s BBQ was founded by Jack Timmons, who attended a BBQ Summer Camp at Texas A&M’s Meat Science Department in 2012. Inspired by Central Texas barbecue, he returned to Seattle, bought an offset smoker, and launched the Seattle Brisket Experience. After hosting “BBQ Raves” for over a year, he opened the first Jack’s BBQ in Seattle’s SoDo neighborhood. The brand has since grown to several locations across the city.
What Now Seattle reached out to Timmons for comment on the Federal Way expansion but has not yet received a response.
