Chef Jason Carron is on a mission to build more than just a restaurant—he’s growing a brand.
Just over a year after launching Post 1917 Steakhouse in Reading’s historic post office building, the seasoned New England chef is preparing to expand with two new locations: one in Lexington and another in Somerville.
In an interview with What Now Boston, Carron shared that the Lexington steakhouse, located at 27 Waltham St, is set to open “any day now.” “We’re from Reading,” he said. “Reading is amazing, and we feel Lexington is the same kind of feel—same kind of town—and we’re excited to bring this to them.”
Diners can expect the same upscale menu that’s made the original a local favorite, featuring a range of steaks—including filet, ribeye, and long bone cuts—plus decadent dishes like wagyu meatballs, coconut shrimp, Chilean sea bass, and paella. The Somerville outpost, slated to debut next summer in a brand-new building at 16-20 Medford St, will offer a similar lineup.
Carron’s wife, Lori Haverty, designed the Reading restaurant, which was brought to life by J Richard Builders. The new spaces will channel that same warm sophistication, complete with plush green velvet booths and a striking bar with standout lighting.
The Lexington location also boasts a charming new brick detail and includes a downstairs area for private dining and events, bringing the total capacity to nearly 250 guests.
Though live music may make an appearance this fall, Carron stressed that his initial priority is establishing the new streakhouse in the community. “I have such a fantastic team that I get to work with and it’s just a dream come true to be able to grow your imagination—your baby—into a couple of restaurants,” he enthused.
