Popular Family-Owned Fire Tacos de Birria to Open New Capitol Hill Location in Seattle

The family-owned taco spot serves tacos and quesatacos, plus a fan-favorite chile verde wet burrito and handmade tortillas.

A popular family-owned taco spot is expanding with a new location coming soon to Seattle’s Capitol Hill neighborhood. 

According to a post on Fire Tacos de Birria’s Instagram page, the announcement was made with the caption, “Coming soon.” The restaurant currently operates its original storefront in Alki Beach and a food truck in Kent.

“Fire Tacos started out of a garage in Kent and has grown into our Alki Beach location, with Capitol Hill coming soon—something we’re incredibly excited about!,” owner Erika Torres told What Now Seattle.

Fire Tacos de Birria offers a menu centered around its specialty—birria—featuring beef, lamb or goat slow-cooked for hours. Guests can enjoy it in various formats, including quesatacos, mulitas, ramen and traditional tacos served with consommé. Other birria options include the vampiro, a tostada layered with cheese, and the Firebox, which pairs a taco or quesataco.

The restaurant also offers a variety of tacos, burritos, bowls, and quesadillas with fillings such as asada, carnitas, adobada, pollo, shrimp, chile verde, and vegetables. One of the standout items is the Chile Verde Wet Burrito, a fan favorite filled with pork simmered in green sauce.

“Our handmade corn tortillas are a big part of our tradition, made the same way our grandparents taught us, passed down through generations,” Torres said. “My grandfather was one of the pioneers who introduced birria to Los Angeles, and his birria was even featured on Anthony Bourdain’s show. We’re proud to carry forward that same traditional recipe — with our own twist.”

The restaurant also plans to roll out a breakfast and brunch service soon, featuring new Mexican-inspired dishes.

The new location will follow the same hours as the Alki Beach outpost, which operates Tuesday through Thursday from 11:30 a.m. to 9 p.m., Friday and Saturday from 11:30 a.m. to 10 p.m., and Sunday from 11:30 a.m. to 9 p.m. The restaurant remains closed on Mondays.

An exact opening date hasn’t been set, but updates will be shared on their social media page.
