Chef and entrepreneur Mawa McQueen is doubling down on her plans to show Boulder why the snowbirds up in the mountains love her concept so much. Alongside the news we covered last week that Crepe Therapy Café would open near the 29th Street Mall, the business was also announced as an incoming tenant at the Limelight Boulder, 1295 University Avenue.

The creperie will open in December at the brand-new hotel, which just opened this week. The 252-key property is directly across the street from the northwest perimeter of CU Boulder’s campus. McQueen had told Travel Boulder she was eyeing a second location in town near the college campus.

McQueen is an Ivory Coast-born, French ex-pat who opened her own restaurant and catering company, the Michelin-recognized Mawa’s Kitchen, almost 20 years ago. She also started her own granola line, Mawa’s GrainFreeNola, and has released a few books. Her talents have garnered significant recognition, including winning the Colorado Governor’s Minority Business Award in 2020 and 2022, and being a 2022 James Beard Award semifinalist for Best Chef: West.

Crepe Therapy, formerly known as The Crepe Shack, first launched in Snowmass Village in 2018 and then expanded to Aspen in 2023. McQueen rebranded the concept earlier this year. Its menu features vegan, gluten-free, and buckwheat options, alongside smoothies, espresso, organic teas, and French pastries.
