Bella’s Bagels is taking its Colorado Springs concept in a new direction, with Bella’s Bagels & Bistro preparing to bring a full-service restaurant, bar and traditional East Coast deli to Creekwalk Shopping Center.
Planned for 100 E. Cheyenne Road, the new restaurant will offer a considerably broader experience than the brand’s existing bagel-focused concept. Owner Jason Stele says the idea is to build on what customers already enjoy about Bella’s while introducing an entirely new dining experience.
“We’re taking everything people love about Bella’s Bagels and creating an entirely new dining experience,” Stele said.
The restaurant will operate with two distinct dining periods. Its daily brunch menu, available from 7 a.m. to 3 p.m., will feature breakfast and lunch inspired by traditional New Jersey and New York delis.
From 5 p.m. to 9 p.m., the focus will shift to dinner, with a Sunday supper-style menu built around the kind of comfort food associated with East Coast delis.
The expanded concept will also include a marketplace and a full-service bar serving handcrafted, East Coast-inspired cocktails, along with beer and wine.
Beyond the menu, the setting is expected to play a significant role in the experience. Stele describes the restaurant as a cozy gathering place, with views of Cheyenne Mountain and a flowing creek behind the property.
The development will also include a large patio and an amphitheater where outdoor concerts are planned during the summer months, giving the restaurant another reason for guests to visit beyond a meal.
For Stele, the goal is to create a place where people can spend time together rather than simply stop in for breakfast or lunch. “Bellas Bagels & Bistro is a place to gather, celebrate, and make memories with family and friends. It’s Bellas, but on a whole new level!” he said.
The new restaurant is planned for Creekwalk Shopping Center, near South Nevada Avenue. According to the business’s website, the location is under construction, with an opening now targeted for early spring 2027.
