Butcher & Deli Coming to New Market Concept

The Warehouse Urban Grocer will open in Downtown Colorado Springs.

Colorado Springs will welcome The Warehouse Urban Grocer, a chef-owned market with an in-house butcher and deli, next year. According to Side Dish with Schniper, the concept is slated for a spring debut at 25 West Cimarron Street, in the former gallery and event space at The Warehouse restaurant.

Urban Grocer will be designed as a boutique-style market, deli, seafood counter, butchery, and bakery all in one. Meats will be prepared on-site, such as hams, pastrami, corned beef, turkey, and yak from PBJ Cattle Co. Fresh breads and pastries will be made daily, and produce will come from local suppliers like Valley Roots Food Hub. Prepared grab-and-go meals will also be available.

Chef James Africano, the owner of the establishment, is a self-taught cook with impressive culinary experience across the U.S. He worked as the executive chef at The Warehouse for many years before later returning to buy the business in 2015 with his wife, Shaundy.

Until the end of 2025, The Warehouse will continue to host private gatherings, and those spaces will be renovated for the conversion process. Its website encourages patrons to book the loft or gallery rooms while they still can. The Wine Room private dining area will still be in operation.
