Velvet Taco Continues to Rain Down Liberated Tacos on Williamson County

Velvet Taco is set to unleash more of its liberated tacos to the Texas area with yet another location set to open in Williamson County.

Velvet Taco is unapologetically Texas, and it’s continuing its reign of taco excellence with yet another opening in Williamson County, this time in Georgetown. According to this state document, Velvet Taco is gearing up to open a new location in the Bluebonnet Plaza at 1310 W University Ave.

What Now Austin reached out to Velvet Taco’s Ron Rexroad, who was listed on the permit, and confirmed that a new Velvet Taco is coming. The permit details that construction on the new taco eatery is slated to start in April of next year and wrap up in July 2026. If all goes well on the estimated $700,000 project, Austinies and visitors can expect to take a bite of the new establishment when it opens its doors in the Summer of 2026.

Velvet Taco’s flagship location is in Dallas. Entrepreneurs Randy DeWitt and Jack Gibbons founded and established the taco chain in 2011. Described as the “temple to the liberated taco,” the one-of-a-kind taco concept took the Texas region by storm, not only for its good eats but also for its unique look in its fast-casual setting.

According to its website, there are more than 50 Velvet Taco locations throughout the country.

“Founded on the idea that tacos don’t have to be associated with Tex-Mex cuisine and can be made with the same care and quality ingredients as fine dining, Velvet Taco is where ‘anything goes meets the art of the possible,'” the website reads.

While menus at locations slightly vary, the core is the tacos. While Velvet Tacos offers a variety of tacos for every lifestyle, pork, veggie, seafood, just to name a few, Velvet Tacos also offers bowls, a plethora of sides, alcoholic beverages, and something for the sweet tooth and the kiddos.

The new iteration of Velvet Taco is set to open at the Bluebonnet Plaza at 1310 W University Ave. by Summer 2026.
