As Weston Opening Nears, Café Bastille Sets Its Sights on MiMo

Café Bastille Weston is set to open before the end of the year

This week, growing French cafe Café Bastille announced plans to open its fourth location this winter. With locations already popular in Downtown Miami, Fort Lauderdale, and Miami Beach, the cafe brand will launch its next outpost in Weston, at 1660 Market St.

“We’re so excited to finally bring Café Bastille to Weston,” co-founder Estelle Bellegy said in a press release. “This community has such a clear sense of who it is, and we’ve already felt the enthusiasm from locals who have visited us in other neighborhoods. Opening here gives us the chance to introduce our refreshed menu—from our new bowls and ingredient-driven plates to our playful matcha-forward drinks and cocktails—created with clean sourcing in mind. Our goal is to become a true neighborhood café, a place people can stop in for a weekday breakfast, a lingering weekend brunch or a quick moment of comfort whenever they need it.”

The press release describes a “conscious shift” in the brand’s approach to its menu, a move to “simplify ingredients, eliminate seed oils, and raise sourcing standards. Across all locations, the brand will cook exclusively with beef tallow, butter and olive oil and source only free-range chicken, cage-free eggs, and non-dairy milks free of seed oil.” Accompanying this shift is a full menu refresh.

That means several exciting new items on the way, including Sweet Potato Waffles (a gluten-free option topped with strawberries, maple-pecan butter, homemade granola and candied pecans), Harvest Chicken Toast (layered with tomato, feta, pickled onions, arugula, lemon and extra-virgin olive oil), the Spicy Bowl (made with quinoa, arugula, avocado, cherry tomatoes, cucumbers and spicy mayo), and Stella’s Fave Bowl (with lentils, short-grain rice, peppers, tomato, avocado, onions, lemon and cilantro aioli), the latter two bowls being served with a choice of protein: Chicken Thighs, Salmon Fillet, or Beef Fillet.

That’s not the only big news to break this week for Café Bastille. The press release also announced a continued South Florida expansion into 2026, with a new Café Bastille planned for Miami’s MiMo District. This new location “will feature a beautiful backyard garden, offering a serene retreat for guests to enjoy the brand’s signature all-day brunch.”

What Now spoke this week with Francisco Aristy, director of operations at Café Bastille. Aristy said the Weston location is working towards an opening in December and that it’s still too early to share further details about Café Bastille MiMo.
