Hi-Def Hospitality Brings New York Edge, Miami Flair to Philadelphia with Savu

The new fine-casual concept will open this winter, featuring a New American cuisine.

Philadelphia’s dining scene is about to get bolder: Kevin Dolce’s Hi-Def Hospitality is launching a new concept blending New York edge with Miami flair.

“This one gives more of a New York, Miami feel. I think everything else in the city of Philadelphia is very classic, but this one’s going to bring a unique twist to what we designate as a good dining experience,” Dolce told What Now Philadelphia.

Savu will open at 208 S. 13th Street this winter.

“Savu is more of a turn in which we’re doing a completely different concept, more fine casual dining,” he said.

The hospitality group is best known for Taste Cheesecake Bar, which has received accolades in both Philadelphia magazine and The Philadelphia Inquirer. Its portfolio also includes Taste Taco Bar, Enigma Sky and Finish.

Dolce said Savu’s theme is “very particular,” spanning two distinct floors. The space will feature an open layout with a retractable roof and collapsible windows to create an outdoor atmosphere.

“To your right hand side, when you first walk in, we have an area called: The Living Room. There’s a couch and seating areas. We have three dining tables where you’ll be able to dine at. We have a huge bar that is about 30 feet long, running the course of the restaurant downstairs,” Dolce said.

He continued, “Upstairs, you’ll get a different feel. Our color scheme on our seats is like a burnt, rustic orange. They’re made out of suede with a chocolate border. There’s also wood paneling and two more bars upstairs.”

The menu will feature a modern take on New American cuisine, accompanied by a carefully curated cocktail program that’s still in development.

“We’re doing chicken, fried chicken wings with caviar, Maryland blue crab egg rolls, short rib and roast beef,” Dolce said. “I feel like I’m very much of a foodie, so everything we have is definitely something that’s going to be eye-opening to the public and going to tantalize a lot of palates.”

Savu will host a few soft openings at the end of December, then welcome guests to a New Year’s Eve extravaganza with ticketed entry to ring in 2026.
