A local entrepreneur is starting from scratch after scratching his initial idea for a food spot in FoCo. Spuds Lounge, a baked potato place, will no longer be coming to 103 E Laurel St. The property is now set to become a full-service brunch spot and lounge called Zen Haven, according to the Coloradoan.
Behind the new business is Seth Tatman. He first gained recognition with The Munchie Machine, a food truck serving Weld and Larimer counties. What Now Denver covered his initial idea for a brick-and-mortar spot earlier this year. No reasoning was given on why the spud-centered idea was nixed.
Formerly Story of My Life Tattoo shop, the space will open early next year. It will feature a downstairs lounge and game room, intended as a casual spot for students and locals seeking late-night entertainment.
The concept will focus on brunch offerings like fruit and yogurt parfaits, avocado toast, quiches, build-your-own charcuterie boards, and customizable pinwheels. Coffee from local roasters will be served, with wine service planned, pending liquor license approval.
